I know I'm only on day three but I am so satisfied with the meals. I dont even think about food anymore. This almost seems too easy! As two of us in the household are doing the plan we needed to double the meals so my dad could eat as well, it was easy enough to do. We were so surprised at how low the grocery bill was this week.
I feel so full on this meal plan. The only hiccup I had was the thai beef salad for leftovers would have been much better cooked that day instead of the night before as it went soggy. Overall I'm enjoying this challenge.
